Riso di Sardegna has been the first rice industry in Sardinia since 1951. Over the years, rice cultivation has become one of the main agricultural activities in Oristano and Sardinia.
Rice, the most consumed cereal in the world, began to be appreciated in the West towards the first century BC. In the Greco-Roman world it was considered an exotic spice and a medicament.
Harvested in October, it is dried, then cleaned, refined and bleached.
Superfine Arborio Rice, with very large and full-bodied grains, is excellent for risotto, as the high starch content allows for a good creaming. Thanks to its delicate taste, it goes well with all recipes, from the most refined risotto, to salads, to timbale. To be seasoned with sauces of any kind, sauces, fresh or cream vegetables, seafood and fresh fish, or simply with extra virgin olive oil and grated Pecorino.
